Keynote Speaker

Ruth Stanley, OSB, PharmaD, MA, FASHP

Sister Ruth is a Benedictine sister from St. Benedict's Monastery in St. Joseph, MN.  She has over 25 years of clinical, academic and administrative experience in health care systems and over 20 years of spiritual ministry and holistic practice experience.  She holds a Doctorate in Pharmacy with post-doctorate residency training (cardiovascular and critical care medicine) and a Masters in Spirituality; she is also certified in Spiritual Direction Retreat work.  Sister Ruth currently works for the Central Minnesota Heart Center where she coordinates Holistic Services.

St. Joseph's Medical Center is pleased to announce that Chef Paul Skinner has joined the Essentia Health St. Joseph's Medical Center Nutrition Services Department.  Skinner will lead the culinary staff and focus on menu development.

Skinner has experience cooking for a crowd being from a family of 12 children in Northern Wisconsin. He earned an associates degree in applied science culinary arts from Nicolet College of Rhinelander, WI.

Essentia Health patients, their families, and staff will benefit from his more than 14 years of culinary experience that includes country clubs, restaurants, catering, and hospital food service.

Most recently Chef Skinner and his family relocated to Brainerd from the upper peninsula of Michigan where he was the executive chef and food service director at Portage Health.

“My passion is hospital food service where I can help people with the food that I serve. Food is a very important aspect of all of our lives. One of my favorite quotes is ‘There is more happiness that comes from the discovery of a new dish than the discovery of a new star,’” said Chef Skinner. “My mission is to make food that is loved by all and that encourages health of the body and mind.”

Patients at Essentia Health St. Joseph's Medical Center can enjoy their meals when they choose through the Room Service Dining model in which they order on demand what they would like to eat. Menu selection includes more than 14 types of meal categories or cooking techniques including “Deli Favorites”, “From Our Grill”, and “The Omelet Station”. Each patient selects choices based on what is pleasing to their taste and it is delivered directly to them by food service staff.

Patient families, hospital staff, and community guests enjoy multiple meal options including a daily soup and salad bar at the River Room cafeteria located at Essentia Health St. Joseph's Medical Center where lunch is served from 11 am to 1:30 pm and dinner from 4:30 to 7 pm.
